LARAMIE - A new all-in-one reference book for food producers and consumers has been assembled and published by three nutrition and food safety educators with the University of Wyoming Cooperative Extension Service.

"Wyoming Local Foods: The Guide" is available online and in print. It offers advice and tips for local producers, food groups and farmers' markets, as well as information on safety, storage and preservation with recipes provided.

The authors are: Kentz Willis, M.S., who serves northeastern Wyoming from the Sheridan County office; Jen Jacobsen, R.D., who's in western Wyoming, with an office in Teton County; and Suzy Pelican, M.S., R.D., who was a specialist on the UW campus and now is retired.

Some of the topics covered include: why buy local?, food storage and preserving produce whether grown at home or purchased at a farmers' market or grocery store; herbs, specialty crops, and contact information for UW-CES offices, locations of farmers' markets and other food events across the state, and more.

In the "why buy local?" section, the data looks at knowing the food source; freshness and flavor; personal health; supporting local family farms and preserving open space; and food system defense.

The guide says, "Taste and nutrition are important when preparing food, but food safety needs to be front and center too. Foodborne illnesses can be serious - even life threatening - but you can prevent most cases by following a few simple rules." Those rules are included.

There is a section on herbs with how to grow and dry them, selection of herbs to go in certain dishes and recipes. Proper cooking temperatures for meats and tips on canning also are included.
